On Tuesday morning I got a voicemail from my mom.
“Amanda, Miles wanted to give you a call. Here’s Miles. [Miles enthusiastically gibbering.] And here’s the translation. Miles just told me he wanted to go to Aunt Panda’s house and make a banana cream pie. Just wanted to let you know.”
So we made a banana cream pie.
First I had to decide on a recipe. I have difficulty committing, so I combined a few different recipes.
- 1 1/2 c. graham crackers (finely ground)
- 6 tbs. butter (melted)
- 1/3 c. sugar
- 1 small box of instant vanilla pudding
- 1 3/4 c. milk
- 8 oz cream cheese (softened)
- 2 bananas
- 1/3 c. sugar
- 1/2 pint heavy cream
- powdered sugar (to taste)
Miles did most of the hard work.
First we ground the graham crackers in a small food processor. Mixed in the melted butter and sugar.
Pressed into a pie plate. Bake at 375 for 7 minutes.
Next we mixed the filling. Cream the cream cheese with the sugar. Add in instant pudding and milk. Mix until smooth and thickened.
Roughly chop one banana. Mix into the filling. (Snack on some if desired.)
Slice second banana and line bottom of pie plate. Pour filling over bananas. Chill in fridge until firm.
Take a break to eat a snack and play with toys. (optional)
Make fresh whipped cream topping. Mix heavy cream with powdered sugar until firm. Spread over pie.
Enjoy with Uncle Glenn (no gluten for Aunt Panda).

We managed to have only one small meltdown when Miles spilled water on his shirt. “I got water on my beautiful shirt! I have to go home and change!”
Later I made a gluten free version by substituting gluten free chocolate cookies for the graham crackers. I also added the salted caramel sauce and mini chocolate chips on top. Completely delicious.
